I got the idea for these mouthwatering wraps off Pinterest (duh). Here's the link to the original inspiration, and here's my version...first changed because I had thawed ground beef for supper instead of chicken :)
Beef Mixture:
1 pound ground beef
1 onion
1 green pepper
however many green onions you like
Taco seasoning (1 packet, or 3-4 Tbsp of the Costco sized container)
1 can black beans
Cook it all up in a frying pan!
Rice Mixture:
2 cups rice (it was more than enough, but I'll freeze it for later)
Juice of one lime, or the equivalent in bottled lime juice
1 tsp cumin
Mix the last two ingredients into the cooked, warm rice
Other Ingredients:
6 Flour tortillas
Shredded Cheddar
Sour Cream
To Make them:
Sprinkle cheese over the tortilla shells, leaving a one inch border. Then layer beef and rice mixtures down the centre. Top with sour cream if you like (it makes them so yummy and creamy!). Roll up tightly and spray both sides with cooking spray. Grill 2 at a time in a hot pan until golden brown and crisp, about 2-3 minutes each side. Transfer to a plate and repeat with remaining wraps.
