Tex Mex Goulash

I've had a few friends ask me for dinner ideas lately, and the recipes that go along with it. I know that there are TONS of recipes online, but I thought I would put a few of our family's favourites here on my blog. I'll post them to the Recipe Book page, but I don't know if I can post them straight to that page without putting them on the main page first. If anyone knows anything about that, can you teach me? Thanks.

Tonight I totally made the recipe up, so the amounts may be a bit....estimated :p
Our family loves Mexican food. All I have to do is add black beans to a dish and I'm pretty much guaranteed that the whole family will eat it LOL.

Tex Mex Goulash

2 cups  macaroni
1 pound ground beef
Half an onion
2 Tbsp taco seasoning (or 1 packet)
1 tsp chili powder
1 can diced tomatoes
1 can tomato sauce (I ended up using only about 3/4 of the can...it was a big one)
1 can black beans, drained and rinsed
1 can green chilies ( I love the flavour these add to Southwest cooking!)
1 cup frozen corn


Brown the ground beef. Dice the onion and cook with it. Once it's browned, add the taco seasoning and chili powder.

In a separate pot, cook the macaroni. Drain, rinse and set aside for now.

Once the meat is cooked through, it's pretty much downhill from here! Add the macaroni to the beef, open the cans and add the other ingredients. I stirred the tomato sauce in a bit at a time until it was the constancy I wanted. Heat through, and serve!

This recipe made more than enough for our family...I could probably get another entire meal out of it!


Total time: less than half an hour. Perfect for me, since I had spent the whole day in the kitchen making Valentine's cookies anyway!
