Marshmallow Popcorn? Yes please

I saw this idea on Pinterest about a month ago and thought it looked good, so I bought a bag of mini marshmallows.

Then I got to thinking...if it really IS that good, I probably shouldn't even make it since I'll eat way more than I need. So the marshmallows sat on the shelf...until last night, that is.

It. is. delicious.

And dangerously easy, I might add

Here's what you do....pop about 8 cups of popcorn (or 2 bags if you're microwaving it), and take out the unpopped kernels so you don't break a tooth!

In a pot on medium-low heat, melt together half a cup of butter, 4 cups of mini marshmallows, and 1 cup of brown sugar. 

When it's all melted together, pour it over the popcorn and stir to coat evenly.

Oh, and here's a little "He said/she said" for you.....

6:00pm

He said, "do you want anything sweet from town before I come home?"

She said, "no thanks, I just made marshmallow popcorn as a snack, so our sugar quotas are full!"

He said, "sounds disgusting"

11:00pm (after watching a movie...there was some leftover popcorn in the bowl)

He said (munching on the popcorn for the first time), "wow, what is in this?!?"

She said, "Marshmallows, brown sugar and butter"

He said, "it's really delicious!"

She said, "yeah, I put off making it until now because I was afraid I'd get addicted"

He said, "you should have put it off longer" as he breaks off a huge hunk.
