The Best Cookies Ever? I'm afraid they just may be....


Soft Ginger Cookies with Lemon Icing.

I know. You're mouth started watering just reading the title, right? Well, wait until you try the cookies! The combination of soft gingerbread (kind of a brownie texture), with a tangy lemon icing is to die for! Especially when they are warm :) Which works well, because that way you can eat them all while they are warm, and dedicate the next day to burning them off! Haha
Okay, enough teasing, here's the recipe:

Cookies:
1/2 C sugar
1/4 C shortening
1/2 C molasses
1/2 C hot water
1 egg
2 C flour
1 tsp soda
1/2 tsp salt
1/2 tsp ginger
1/2 tsp cinnamon
1/2 tsp pumpkin pie spice

Mix all of these together...first the wet, then add the dry. Drop by spoonfull onto a greased baking sheet and bake at 375 for 8-10 minutes.
While they are cooling a bit, make the icing!

Icing
2 C icing sugar
1-2 tsp lemon peel
2 Tbsp margarine
2 Tbsp lemon juice (I added a bit more for extra flavor!)
1 Tbsp milk

Mix together, pile on top of the cookies, and fall in love!

I"m 29 weeks old now, so I figured it was time that I said hi for myself!
So yeah, I'm 29 weeks along, so that means mommy is on the home stretch, in the third trimester! I'm about the size of a butternut squash now, weighing in at about 2 and half pounds and measuring 15 inches long....although I can't seem to get enough food lately, hehehe, I make mommy eat ALL the time! So, in reality, I probably weigh closer to 5 pounds! LOL
I'm soaking in all the calcium I probably can, so in addition to making her eat all the time, I request a glass of milk a few times a day, and even in the middle of the night! Got milk?
It's starting to get a little squishy in here, but it helps when I put my feet on mommy's hipbone and push my head up into her ribs...it gives me a little more room, and always gets her attention! She always talks to me when I do it! She says, "baby, please get out of my ribs so I can breathe!"
I have started playing with my sisters more often...I like it when Addison pokes at me, so I can kick her back! I love when she sings to me too! I can feel her lay her head on mommy's tummy and talk to me. Sometimes she sings, and sometimes she asks mommy if she can name me Becky, or Selene, or Daisy :)
A couple nights ago I think Tegan was trying to get me out of my comfy home though, because she fell on mommy's tummy so hard that I got a headache! oooof! She sure likes to play rough!
Anyway, it's naptime, so I'm going to cuddle up and sleep for awhile. I have alot of growing to do in the next 11 weeks!

Saturday

So, a friend called about a half hour ago and asked if the girls wanted to come over and play for a couple hours. I love little surprises like that! :) So now, I am just sitting here...really tired, but I also have alot to do. My living room looks like a hurricane hit it! I had Alexa here last night, and her and the girls did a good job of emptying the contents of their bedroom into my living room! LOL
But, I  lit my grape candle, so now at least it smells good in here! I love that candle...so relaxing and fresh and fruity :) My friend Crystal sells them, so if you want your own grape candle, you can find her in my facebook friends and order one...Crystal Robar is her name.
The last couple of weeks have been super busy for us. Daniel is in Nigeria, and for the first week he was gone, the girls and I stayed at his parents' house for easter. It was fun, the girls got to hang out with Grandma and Grandpa and their aunties...they decorated eggs, and fed the animals! Good times.
Since we've been home, we haven't slowed down much. I got the baby's room almost ready...just a little more painting, and a crib, and I'm done!
But now, Daniel will be home tomorrow, and the girls are so happy! 
I'm sure I'm not making any sense any more...I should go for a bit and write more when my brain turns on! see you!

When Things are Tougher than they should be....

Like everyone, I've had struggles in my life. The past year has unfortunately been particularly difficult. During some of the hardest times, I was advised by a very wise friend to start reading the bible front to back, because every word is God breathed. It was all great, but when I got to this verse in Joshua 23, I couldn't take my eyes off it! It has since become my "theme" verse that I repeat in my head daily...whenever things start to get overwhelming.
Saying it helps me remember that with God's help, I can get through any trial that will come in my life. He will guide every step if I let him take control...he is there to fight for me when I can't do it for myself.
So, next time you feel overwhelmed, remember this verse, and how very much God adores you!

10 One of you routs a thousand, because the LORD your God fights for you, just as he promised.


11 So be very careful to love the LORD your God.

My favorite Day this Year!!

Spring is here! I have been dreaming of this day for months, and it finally came!! We roasted hotdogs, drank iced tea, and soaked up the sun! Aaaahh, life was good. I mean, besides the thousand pounds of mud! Poor Addison, Tegan and Kiley weighed 10 pounds more each with the mud on their boots! Ah well, give it a week and they'll be running around in sandals!
Tomorrow I'm going to really celebrate spring by making my first jug of suntea!!
If you want to make some too, but never have, it's super easy...
1. Get a 1 gallon glass jar
2. Fill it with water and add 6 tea bags. Whichever flavor you like, but my fav is green tea!
3. Place it in a sunny place outside
4. Wait 4 or 5 hours
5. Bring it into the house, and add your choice of: 2 scoops of countrytime lemonade, a can of frozen lemonade, half a cup of sugar, or simply a few splashes of lemon juice for flavor
6. Pour over ice and enjoy!

This year we spent Easter in two places!! A few days at Grandpa Ron's and Grandma Karen's, then we met my family at Uncle Dillon's and Aunty Jodi's! The girls had so much fun...and got two or three egg hunts in! The only bad part is that daddy wasn't there with us. We miss you daddy! See you soon!

Five Things...


I've been thinking about my pregnancy tonight, as "Daisy" is rolling around inside me and keeping me awake :) and here is what I've come up with:

Least Favorite:
1. The 21 weeks of excruciating nauseau!! By far, the worst physical thing I have ever gone through...3-5 times a day throwing up, and two trips to the er for rehydration...from which I discovered that I almost have a panic attack when I'm hooked up to an IV!! Sheesh.
2. The separating pelvis. OWIE!!!! is all I can say about that. It's better to have than the sickness, but oh my goodness, I am looking forward to the minute my baby is born and my pelvis returns to normal!
3. The occasional bursts of rage that well up inside me :)
4. The tired tummy muscles
5. The "it only gets worse" and "my, you're going to be busy!" comments. I know that I'll be busy, I already have TWO of them!! hahaha

Most Favorite:
1. My body. I love how I look when I'm pregnant...and the fact that I am Never worried about sucking in my gut!! Although the love handles and double chin could go anytime and I wouldn't miss them :)
2. As much as I hate those occasional bursts of rage, I do like the fact that I am more open with my opinion, and it is easier to "say the hard things" when I know I need to anyway!
3. Feeling my baby move around inside me, and knowing that she is one hundred percent safe, protected, and innocent....and being formed perfectly by God. I loved watching how content she looked on the 3D ultrasound!
4. Seeing how excited Addison and Tegan are to meet their little sister and help take care of her!
5. Knowing that God has blessed us so much with this baby, and the gift of being able to raise her and love her, and be blessed by her amazingness as she grows! I'm so excited to have her be a part of our family!
